Description

Ajvar is a traditional Balkan pepper spread that features roasted red bell peppers and eggplants blended into a smooth, flavorful condiment. This versatile spread is perfect as a dip, sandwich topping, or side dish, known for its smoky, tangy taste with an optional spicy kick from chili flakes.

Instructions

  1. Preheat and Prepare Vegetables: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange the red bell peppers and eggplants on it, ensuring they are spaced out for even roasting.
  2. Roast Vegetables: Roast the peppers and eggplants for 30-40 minutes, turning occasionally to ensure the skin gets charred evenly and the vegetables become soft.
  3. Steam to Loosen Skins: Remove the roasted vegetables from the oven and cover them with plastic wrap or a lid. Let them steam for 10-15 minutes to help loosen their skins, making peeling easier.
  4. Peel and Seed: Carefully peel off the skins from the peppers and eggplants. Then remove the seeds from the peppers.
  5. Blend Ingredients: Place the peeled vegetables, minced garlic, olive oil, white vinegar, and salt in a food processor. Blend until you achieve a smooth or slightly chunky texture, depending on preference.
  6. Add Spice (Optional): If you want a spicy ajvar, add 1/4 teaspoon chili flakes to the mixture and blend shortly to incorporate.
  7. Store and Serve: Transfer the ajvar to a jar or serving dish. Store it in the refrigerator for up to one week or freeze for longer preservation.
