Ingredients
Scale
Eggroll Wrappers
- 1 package eggroll wrappers
Filling
- 8 ounces cream cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped cooked bacon
- 2-3 jalapeños, finely chopped
- 1 tablespoon ranch seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
For Frying
- 1 tablespoon olive oil
Instructions
- Prepare the eggroll wrappers: Lay the eggroll wrappers flat on a clean surface, positioning them like a diamond shape to prepare for filling and rolling.
- Mix the filling: In a medium bowl, combine cream cheese, cheddar cheese, mozzarella cheese, chopped cooked bacon, finely chopped jalapeños, ranch seasoning, garlic powder, onion powder, and black pepper until smooth and well blended.
- Fill the wrappers: Spoon a moderate amount of the filling into the center of each eggroll wrapper, ensuring not to overfill to make rolling easier.
- Fold and roll the eggrolls: Fold the bottom point of the wrapper over the filling, then fold in the left and right sides tightly towards the center. Roll the eggroll upwards towards the top point, sealing the filling securely inside.
- Heat the oil: In a large skillet, heat the olive oil over medium heat until hot but not smoking, ready for frying.
- Fry the eggrolls: Place each eggroll carefully into the hot oil one by one without overcrowding the pan. Fry for 3 to 4 minutes, turning occasionally until all sides are golden brown and crispy.
- Drain excess oil: Remove fried eggrolls with a slotted spoon and place on paper towels to drain excess oil.
- Cool and serve: Allow the eggrolls to cool slightly, then serve warm with optional dipping sauces like ranch or creamy jalapeño dip.
Notes
- Finely chop the jalapeños to avoid bites that are too spicy; remove seeds if less heat is preferred.
- Use cooked bacon that is crispy for the best texture contrast.
- Maintain medium heat during frying to ensure the eggrolls cook evenly without burning.
- You can freeze assembled but unfried eggrolls for later use; fry directly from frozen with a slight increase in cooking time.
- Substitute olive oil with vegetable or canola oil if preferred for frying.
