Potatoes and Seasoning
- 2 pounds russet potatoes
- 2 tablespoons olive oil or avocado oil
- 1 ½ teaspoons salt (divided)

Garlic Parmesan Topping
- 2 tablespoons butter (or additional oil)
- 2 cloves garlic (finely minced)
- ¾ cup Parmesan cheese (finely grated, divided)
- ¼ cup fresh parsley (finely chopped)
Instructions
- Preheat the Oven: Set your oven to 425°F (220°C) to prepare for baking the fries.
- Prep the Potatoes: Rinse and scrub the russet potatoes thoroughly to remove any dirt, then dry them completely. Cut the potatoes into matchstick slices about ¼ to ½-inch thick. Place the potato slices in a large bowl, drizzle with olive or avocado oil, and toss to coat evenly. Sprinkle 1 teaspoon salt and the black pepper over the potatoes and toss again to distribute the seasoning.
- Bake the Fries: Line a large half-sheet pan with parchment paper or use two regular baking sheets. Arrange the potato slices in a single layer on the baking sheet(s), making sure the fries are not touching to ensure crispiness. Sprinkle ¼ cup of the grated Parmesan cheese evenly over the fries. Bake in the preheated oven for 35-40 minutes, flipping the fries halfway through the cooking time. When flipping, sprinkle an additional ¼ cup Parmesan cheese and spread the fries back into a single layer.
- Make the Garlic Butter: In the last five minutes of baking, melt the butter in a small saucepan over medium heat. Add the finely minced garlic and stir constantly for 1-2 minutes until the garlic begins to brown. Remove from heat immediately to avoid burning.
- Season and Serve: Transfer the baked fries into a large bowl. Pour the melted garlic butter over the fries, add the remaining ½ teaspoon salt, the remaining ¼ cup Parmesan cheese, and the chopped fresh parsley. Toss all ingredients gently but thoroughly to coat the fries evenly. Serve immediately while hot and enjoy!
