Description

A moist and flavorful Banana Bundt Cake loaded with ripe bananas and a tangy cream cheese glaze. This classic dessert combines creamy butter and cream cheese with sweet bananas and warm vanilla, perfect for any occasion or a cozy treat.

Ingredients

Scale

Banana Cake

  • 6 very ripe bananas (medium/large, about 3 cups mashed)
  • 1 cup unsalted butter (at room temperature, 16 Tbsp)
  • 1 1/2 cups granulated sugar
  • 4 large eggs (lightly beaten, room temperature)
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp fine sea salt

Cream Cheese Glaze

  • 4 oz cream cheese
  • 4 Tbsp unsalted butter
  • 1 1/2 tsp vanilla extract
  • 3/4 cup powdered sugar (or added to taste)
  • Pinch of salt
  • 3-6 Tbsp milk (or to desired consistency)

Instructions

  1. Prepare the batter: In a large bowl, mash the ripe bananas until smooth. In a separate bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Gradually beat in the eggs, one at a time, then stir in the vanilla extract. Combine the mashed bananas with the butter mixture.
  2. Mix dry ingredients: In another bowl, sift together the all-purpose flour, baking soda, and sea salt. Slowly add the dry ingredients to the banana mixture and fold until just combined. Avoid overmixing to keep the cake tender.
  3. Bake the cake: Preheat the oven to 350°F (175°C). Grease and flour a bundt cake pan thoroughly. Pour the batter evenly into the prepared pan and smooth the top. Bake for approximately 55 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool for 10-15 minutes in the pan before transferring to a wire rack to cool completely.
  4. Make the cream cheese glaze: In a small bowl, beat the cream cheese and unsalted butter together until smooth and creamy. Add the vanilla extract and a pinch of salt. Gradually mix in the powdered sugar, then add milk 1 tablespoon at a time until you reach your desired glaze consistency.
  5. Glaze and serve: Once the cake is fully cooled, drizzle the cream cheese glaze evenly over the top and sides of the Bundt cake. Let the glaze set slightly before slicing and serving. Enjoy this moist, rich banana bundt cake as a delightful dessert or snack.

Notes

  • Use very ripe bananas for the best flavor and sweetness.
  • Room temperature ingredients help create a smooth, even batter.
  • Do not overmix the batter to avoid a tough cake.
  • Ensure the cake is completely cool before glazing to prevent the glaze from melting off.
  • The glaze thickness can be adjusted by adding more or less milk.
  • Store leftover cake in an airtight container at room temperature for up to 3 days or refrigerated up to 5 days.
