For the Casserole:
- 4 cups thinly sliced potatoes (Yukon Gold or Russet)
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese (divided)
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons butter, cut into small pieces
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat the oven and prepare the baking dish: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook the beef mixture: In a skillet, cook ground beef until browned. Add onion, garlic, salt, pepper, paprika, and thyme. Remove from heat.
- Make the cheese sauce: In a saucepan, whisk together flour and milk until slightly thickened. Stir in sour cream and 1 1/2 cups cheddar cheese until smooth.
- Assemble the casserole: Layer potatoes, beef mixture, and cheese sauce in the baking dish. Repeat layers and top with remaining cheeses and butter.
- Bake the casserole: Cover with foil and bake for 45 minutes. Remove foil and bake for additional 15–20 minutes until golden and bubbly. Let rest before serving. Garnish with parsley if desired.
