Fresh Blueberry Corn Salsa:
- 1 cup fresh blueberries
- 1 cup fresh or grilled corn kernels (about 2 ears)
- 1/2 cup diced red bell pepper
- 1/4 cup finely chopped red onion
- 1 small jalapeño, seeded and minced
- 2 tablespoons chopped fresh cilantro
- Juice of 1 lime
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Combine Ingredients: In a medium bowl, mix blueberries, corn, bell pepper, onion, jalapeño, and cilantro.
- Add Dressing: Drizzle with lime juice and olive oil, sprinkle with salt and black pepper.
- Combine: Gently toss to mix well. Chill for 15 minutes.
- Serve: Enjoy cold or at room temperature with chips or as a topping.
Notes
- For a smoky flavor, grill the corn before adding.
- Parsley can be used instead of cilantro.
