Description

Fresh Blueberry Corn Salsa:

  • 1 cup fresh blueberries
  • 1 cup fresh or grilled corn kernels (about 2 ears)
  • 1/2 cup diced red bell pepper
  • 1/4 cup finely chopped red onion
  • 1 small jalapeño, seeded and minced
  • 2 tablespoons chopped fresh cilantro
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper


Instructions

  1. Combine Ingredients: In a medium bowl, mix blueberries, corn, bell pepper, onion, jalapeño, and cilantro.
  2. Add Dressing: Drizzle with lime juice and olive oil, sprinkle with salt and black pepper.
  3. Combine: Gently toss to mix well. Chill for 15 minutes.
  4. Serve: Enjoy cold or at room temperature with chips or as a topping.

Notes

  • For a smoky flavor, grill the corn before adding.
  • Parsley can be used instead of cilantro.
