Ingredients

Sweet Potatoes:

2 medium sweet potatoes;

Seasonings:

1 tablespoon coconut oil or butter, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg;

Toppings:

1/2 cup Greek yogurt, 2 tablespoons almond butter or peanut butter, 2 tablespoons chopped pecans or walnuts, 2 tablespoons dried cranberries or raisins, 1 tablespoon honey or maple syrup


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare sweet potatoes: Wash and scrub the sweet potatoes, then pierce them several times with a fork. Place on a baking sheet and bake for 45–55 minutes until tender.
  3. Stuff sweet potatoes: Slice each sweet potato open and fluff the inside with a fork. Spread coconut oil or butter inside and sprinkle with cinnamon and nutmeg.
