Description

A flavorful and spicy Buffalo Chicken Pizza that puts a zesty twist on a classic favorite. This homemade pizza features tender buffalo-sauce-coated chicken, fresh mozzarella, red onions, and optional jalapeños, baked to perfection on a crispy crust with a side of cool ranch or blue cheese dressing.

Ingredients

Scale

For the Dough and Crust

  • 18-20 ounces pizza dough (store-bought or homemade)
  • 1/3 cup flour (for crust)
  • Pinch of salt

For the Toppings

  • 1 (8 oz) chicken breast, cut into bite-sized cubes (fully cooked)
  • 1/2 cup buffalo sauce
  • 6-7 slices fresh mozzarella (about 8 oz)
  • 1/2 red onion, thinly sliced
  • Fresh sliced jalapeños (optional, for extra heat)

For Serving

  • Ranch or blue cheese dressing

Instructions

  1. Preheat Oven and Pizza Stone: Preheat your oven to 500°F (260°C) and place a pizza stone inside to heat for 1 hour. This step ensures a crispy base by evenly distributing high heat.
  2. Cook Chicken: In a small skillet over medium heat, cook the chicken cubes with a little oil until golden brown and fully cooked. Remove from heat and drizzle 2 tablespoons of buffalo sauce over the chicken, tossing to coat evenly. Set aside.
  3. Prepare Dough: On a floured surface, roll out the pizza dough into a 12-inch circle. Sprinkle a small pinch of salt over the surface of the dough to enhance flavor.
  4. Transfer Dough to Pizza Peel: Lightly dust a pizza peel with flour to prevent sticking. Transfer the rolled-out dough onto the peel carefully.
  5. Assemble Pizza: Spread the buffalo sauce evenly over the dough, leaving a ½ inch border around the edges for the crust. Then, evenly distribute the buffalo-coated chicken cubes, followed by slices of fresh mozzarella, and top with thin slices of red onion. Add sliced jalapeños if extra heat is desired.
  6. Bake Pizza: Carefully slide the assembled pizza onto the preheated pizza stone in the oven. Bake for 10-15 minutes until the crust turns golden brown and the cheese is melted and bubbly.
  7. Cool and Serve: Remove the pizza from the oven and let it cool for a few minutes. Slice the pizza and serve hot with ranch or blue cheese dressing on the side for dipping.

Notes

  • Ensure the pizza stone is preheated for a full hour for the best crust texture.
  • Use fully cooked chicken to save time and ensure food safety.
  • Adjust buffalo sauce quantity to your preferred spice level.
  • Fresh jalapeños are optional but recommended for an extra kick.
  • Allow the pizza to rest briefly after baking to avoid burns and help the cheese set slightly.
