For the Chicken
- 1 pound boneless, skinless chicken thighs or breasts

For the Slaw
- 4 cups shredded green cabbage
- 2 cups shredded romaine lettuce
- ½ cup Caesar dressing
- ¼ cup chopped fresh parsley

Instructions
- Marinate the chicken: In a bowl, combine the chicken with buttermilk and marinate for at least 30 minutes or up to overnight, allowing the chicken to tenderize and absorb flavor.
- Prepare the coating: In a shallow dish, mix together panko breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper to create a flavorful crust.
- Coat the chicken: Remove the chicken pieces from the marinade and lightly coat each in all-purpose flour. Next, press the floured chicken pieces into the breadcrumb mixture, ensuring they are evenly and thoroughly coated.
- Cook the chicken: Heat olive oil in a skillet over medium heat. Pan-fry the coated chicken for 4–5 minutes per side, cooking until the crust is golden and crispy and the internal temperature reaches 165°F (74°C).
- Rest and slice chicken: Remove the chicken from the skillet and let it rest for 5 minutes to retain juices. Then slice the chicken into strips for serving.
- Prepare the slaw: In a large bowl, combine shredded green cabbage and romaine lettuce. Toss the mixture with Caesar dressing until all the greens are evenly coated.
- Assemble the dish: Plate the dressed slaw and top it with the sliced crispy chicken. Sprinkle chopped fresh parsley over the top and serve with lemon wedges on the side for added brightness.
