4 slices chopped

Butter:

2 teaspoons

Smoked Paprika:

1/2 teaspoon

Dried Thyme:

1/4 teaspoon

Yukon Gold Potatoes:

3 cups, diced

Chicken Broth:

3 cups

Heavy Cream:

1 cup

Whole Milk:

1/2 cup

Cheddar Cheese:

1/2 cup, shredded

Green Onions:

2, sliced for garnish


Instructions

  1. Cook Bacon: In a large pot over medium heat, cook chopped bacon until crisp. Remove and set aside.
  2. Sauté Vegetables: Add butter, onion, celery, and red bell pepper to the pot. Sauté until softened.
  3. Add Seasonings: Stir in garlic, Cajun seasoning, smoked paprika, thyme, and black pepper. Cook for 1 minute.
  4. Cook Potatoes: Add potatoes and chicken broth. Simmer until potatoes are tender.
  5. Finish Soup: Stir in cream, milk, and cheddar. Cook until creamy. Mash some potatoes for texture.
  6. Serve: Top with bacon and green onions. Serve hot.
