Heavy Cream:
1 cup
Whole Milk:

Cheddar Cheese:

Instructions
- Cook Bacon: In a large pot over medium heat, cook chopped bacon until crisp. Remove and set aside.
- Sauté Vegetables: Add butter, onion, celery, and red bell pepper to the pot. Sauté until softened.
- Add Seasonings: Stir in garlic, Cajun seasoning, smoked paprika, thyme, and black pepper. Cook for 1 minute.
- Cook Potatoes: Add potatoes and chicken broth. Simmer until potatoes are tender.
- Finish Soup: Stir in cream, milk, and cheddar. Cook until creamy. Mash some potatoes for texture.
- Serve: Top with bacon and green onions. Serve hot.

- For a vegetarian version, omit bacon and use vegetable broth.
- Add cooked sausage or shrimp for extra protein.
