  • 2 sweet potatoes, peeled and cubed
  • 1 cup chopped onions
  • 2 bell peppers, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 avocado, cubed

  • 1/3 cup tahini
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil

Instructions

  1. Cook the rice: Prepare the rice according to the package instructions until fully cooked and fluffy. Set aside and keep warm.
  2. Roast the sweet potatoes: Preheat your oven to 415°F (215°C). Toss the cubed sweet potatoes with olive oil, Cajun seasoning, salt, and pepper. Spread them evenly on a parchment-lined baking sheet. Roast for about 20 minutes, stirring halfway through, until the sweet potatoes are tender and slightly caramelized.
  3. Warm the black beans: Heat a small amount of oil in a skillet over medium heat. Add the black beans and chopped onions and bell peppers. Sauté for 3-5 minutes until warmed through and onions are softened.
  4. Assemble the bowls: Start with a base of cooked rice in each bowl. Top with roasted sweet potatoes and the warm black bean mixture. Add cubed avocado on top.
  5. Drizzle with tahini: Generously drizzle tahini sauce over each bowl just before serving. Add extra salt or pepper if desired.
