Ingredients
Scale
Vegetables
- 2 cups cauliflower florets (about 1 small head)
- 2 cups broccoli florets (about 1 small head)
- 1/2 cup red onion, finely chopped
Add-ins
- 1/4 cup raisins (or cranberries)
- 1/2 cup cooked bacon, crumbled (optional)
- 1/4 cup sunflower seeds (optional)
Dressing
- 1/2 cup mayonnaise
- 2 tbsp apple cider vinegar (or white vinegar)
- 2 tbsp honey or maple syrup
- Salt and pepper, to taste
Instructions
- Prepare the Vegetables: Wash and chop the cauliflower and broccoli into bite-sized florets. Remove any tough stems from both to ensure a pleasant texture.
- Combine Florets: Place the cauliflower and broccoli florets in a large mixing bowl ready for the other ingredients.
- Prepare the Add-ins: Finely chop the red onion and add it to the bowl with the florets for added bite and flavor.
- Add Raisins, Bacon, and Sunflower Seeds: Mix in the raisins or cranberries, crumbled cooked bacon if using, and sunflower seeds for extra crunch and taste.
- Make the Dressing: In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey or maple syrup, and season with salt and pepper until smooth and creamy.
- Combine the Salad: Pour the dressing over the vegetable and add-in mixture. Toss everything together thoroughly until all ingredients are evenly coated with the dressing. Adjust seasoning as needed.
- Chill the Salad: Cover the salad and place it in the refrigerator for at least 30 minutes to let the flavors meld beautifully.
- Serve: Serve the salad chilled, optionally garnished with extra bacon or sunflower seeds for a decorative touch and added flavor.
Notes
- The salad is best served chilled after allowing the flavors to blend in the refrigerator for at least 30 minutes.
- Bacon and sunflower seeds are optional but add delicious texture and flavor.
- You can substitute honey with maple syrup for a vegan-friendly alternative, but the mayonnaise would need to be vegan as well.
- For a lighter version, consider using low-fat mayonnaise.
- This salad keeps well in the refrigerator for up to 2 days but is freshest when consumed within 24 hours.
