Potatoes and Sausage

  • 1½ pounds Yukon Gold or Russet potatoes, peeled and thinly sliced
  • 12 ounces smoked sausage, sliced into rounds
  • Nonstick cooking spray, as needed

Cheese Sauce

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1½ cups whole milk
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Garnish

  • 2 tablespoons chopped fresh parsley (optional)


Instructions

  1. Prepare the baking dish and sausages: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with nonstick cooking spray. In a skillet over medium heat, cook the smoked sausage slices for 4–5 minutes until browned. Remove from skillet and set aside.
  2. Make the cheese sauce: Using the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes while stirring constantly to form a roux. Gradually whisk in the whole milk and continue cooking for 3–4 minutes until the sauce thickens. Stir in the shredded cheddar and mozzarella cheeses along with garlic powder, onion powder, salt, and black pepper until the sauce is smooth and the cheese is fully melted.
  3. Assemble the casserole: Layer half of the sliced potatoes in the prepared baking dish. Add half of the browned smoked sausage evenly on top, then pour half of the cheese sauce over the layers. Repeat this layering with the remaining potatoes, sausage, and cheese sauce.
  4. Bake the casserole: Cover the baking dish with foil and bake in the preheated oven for 40 minutes. After 40 minutes, remove the foil and continue baking for an additional 20–25 minutes, or until the potatoes are tender and the top is golden and bubbly.
  5. Rest and serve: Remove the casserole from the oven and let it rest for 10 minutes before serving. Garnish with chopped fresh parsley if desired for a fresh, bright finish.

Notes

  • You can substitute kielbasa or turkey sausage if preferred.
  • Add a pinch of cayenne pepper or red pepper flakes to the cheese sauce for a spicy kick.
