Description

These Cheesy Corn Fritters are a delicious appetizer or side dish made with corn, cheddar cheese, and a flavorful blend of spices. Crispy on the outside and tender on the inside, these fritters are perfect for snacking or as a party dish.

Ingredients

Scale

Dry Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika

Wet Ingredients:

  • 2 large eggs
  • 1/2 cup milk

Add-Ins:

  • 1 1/2 cups corn kernels (fresh, canned, or frozen and thawed)
  • 1 cup shredded cheddar cheese
  • 2 green onions, finely chopped
  • 2 tablespoons fresh parsley, chopped

For Frying:

  • 2 tablespoons butter or oil

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, pepper, and paprika.
  2. Prepare Wet Mixture: In a separate bowl, whisk the eggs and milk until smooth. Add the wet mixture to the dry ingredients and stir until just combined.
  3. Combine Ingredients: Fold in the corn, shredded cheese, green onions, and parsley.
  4. Fry Fritters: Heat butter or oil in a skillet over medium heat. Drop spoonfuls of batter into the skillet, flattening slightly. Cook for 2 to 3 minutes per side until golden brown and cooked through.
  5. Serve: Remove from the pan and drain excess oil on paper towels. Serve warm with sour cream or dipping sauce.

Notes

  • You can use a mix of cheeses such as mozzarella or pepper jack for extra flavor.
  • To add spice, include finely chopped jalapeños to the batter.
  • Fritters can be kept warm in a low oven if making a large batch.
