- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano

- Combine Ingredients: In a large bowl, mix the drained and rinsed white beans, diced tomatoes, sautéed onions and garlic, dried oregano, dried basil, salt, and black pepper. Stir thoroughly to combine all flavors evenly.
- Layer the Casserole: Spread half of the white bean and tomato mixture evenly in the prepared baking dish. Sprinkle half of the shredded mozzarella and grated Parmesan cheeses over the mixture. Then layer the remaining bean mixture on top and finish by sprinkling the remaining cheeses evenly.
- Bake: Place the casserole in the preheated oven and bake for 25 to 30 minutes or until the cheese is fully melted, bubbly, and lightly golden on top.
- Garnish and Serve: Remove the casserole from the oven and let it cool for about 5 minutes. Garnish with fresh parsley or basil leaves before serving to add a fresh herbal note and vibrant color.
