  • 8 oz fettuccine pasta

  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the fettuccine according to the package directions until al dente. Drain, reserving 1/2 cup of the pasta water, and set the pasta aside for later.
  2. Prepare the chicken: Heat olive oil in a large skillet over medium-high heat. Season the sliced chicken breasts with salt and black pepper. Cook the chicken for 4 to 5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  3. Sauté mushrooms and garlic: In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and cook for 5 to 6 minutes until they are tender and golden. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Make the Alfredo sauce: Reduce the heat to medium-low and stir in the heavy cream. Simmer the mixture for 2 to 3 minutes, then whisk in the grated Parmesan cheese until the sauce becomes smooth and creamy. Add nutmeg if desired for extra depth of flavor.
  5. Combine and finish: Slice the cooked chicken into strips and return it to the skillet along with the cooked fettuccine. Toss everything together carefully, adding reserved pasta water a little at a time if the sauce needs loosening. Adjust seasoning to taste.
