Ingredients
Scale
Chicken
- 2 boneless, skinless chicken breasts, sliced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Pasta
- 8 oz fettuccine pasta
Sauce
- 8 oz cremini or white mushrooms, sliced
- 3 cloves garlic, minced
- 2 tablespoons butter
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/4 teaspoon nutmeg (optional)
Garnish
- Chopped fresh parsley
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil and cook the fettuccine according to the package directions until al dente. Drain, reserving 1/2 cup of the pasta water, and set the pasta aside for later.
- Prepare the chicken: Heat olive oil in a large skillet over medium-high heat. Season the sliced chicken breasts with salt and black pepper. Cook the chicken for 4 to 5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
- Sauté mushrooms and garlic: In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and cook for 5 to 6 minutes until they are tender and golden. Add the minced garlic and cook for an additional 30 seconds until fragrant.
- Make the Alfredo sauce: Reduce the heat to medium-low and stir in the heavy cream. Simmer the mixture for 2 to 3 minutes, then whisk in the grated Parmesan cheese until the sauce becomes smooth and creamy. Add nutmeg if desired for extra depth of flavor.
- Combine and finish: Slice the cooked chicken into strips and return it to the skillet along with the cooked fettuccine. Toss everything together carefully, adding reserved pasta water a little at a time if the sauce needs loosening. Adjust seasoning to taste.
- Garnish and serve: Sprinkle chopped fresh parsley over the dish for color and fresh flavor. Serve the creamy chicken and mushroom Alfredo warm for a satisfying meal.
Notes
- Use pre-cooked rotisserie chicken to save time and simplify the recipe.
- Add fresh spinach or peas for extra vegetables and color.
- To make it gluten-free, substitute the fettuccine pasta with your preferred gluten-free pasta variety.
