- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
Garnishes

- Sliced green onions
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
- Mix Filling: In a large bowl, combine shredded chicken, black beans, corn, diced tomatoes with green chiles, cooked rice, sour cream, cream of chicken soup, chili powder, cumin, garlic powder, and salt. Mix well until all ingredients are thoroughly incorporated.
- Layer Tortillas: Cut or tear the flour tortillas into 2-inch pieces. Spread half of the tortilla pieces evenly in the bottom of the prepared baking dish to form the first layer.
- First Layer Filling: Spoon half of the chicken mixture over the tortilla layer, evenly spreading it out.
- Add Cheese: Sprinkle 1 cup of shredded Mexican blend cheese evenly over the chicken mixture.
- Repeat Layers: Repeat the layering process with the remaining tortilla pieces, chicken mixture, and cheese, creating a second layer built the same way.
- Bake Covered: Cover the casserole with aluminum foil and bake for 25 minutes in the preheated oven.
- Finish Baking Uncovered: Remove the foil and continue baking for an additional 10 minutes, or until the casserole is bubbly and the cheese on top has melted and turned golden brown.
- Cool and Garnish: Allow the casserole to cool slightly before serving. Garnish with chopped cilantro and sliced green onions as desired for fresh flavor and color.
Notes
- You can substitute Greek yogurt for the sour cream to reduce fat and add protein.
- For a healthier option, use brown rice instead of white rice.
- To make it gluten-free, use gluten-free tortillas and ensure the cream of chicken soup is gluten-free.
- Serve with sides like salsa, sliced avocado, or hot sauce to add extra flavor.
