Ingredients

Scale

For the Chicken:

  • 1 pound boneless skinless chicken breasts, sliced into strips
  • 2 tablespoons olive oil, divided
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Bowl:

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 cups cooked rice or cauliflower rice
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Prepare the Chicken: In a large bowl, coat the chicken strips with 1 tablespoon of olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper.
  2. Cook the Chicken: Heat the remaining olive oil in a skillet over medium-high heat. Cook the chicken for 6 to 8 minutes until browned and cooked through. Set aside.
  3. Sauté Peppers and Onions: In the same skillet, sauté the peppers and onion for 5 to 6 minutes until tender and slightly charred.
  4. Assemble the Bowls: Divide the rice among four serving bowls. Top with chicken, sautéed peppers and onions, black beans, corn, avocado slices, and cilantro.
  5. Serve: Serve the bowls warm with lime wedges on the side.
