Ingredients

Scale

Protein and Vegetables

  • 2 cups mushrooms, sliced
  • 2 green onions, sliced

Noodles

  • 3 cups cooked lo mein noodles

Sauces and Seasonings

  • 2 tablespoons vegetable oil
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • 1 tablespoon sugar
  • 1/4 cup water
  • 1/4 teaspoon black pepper

Instructions

  1. Heat Oil: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
  2. Cook Chicken: Once the oil is hot, add the sliced chicken breast to the skillet.
  3. Stir-fry Chicken: Stir-fry the chicken for 5-6 minutes, or until it is fully cooked and no longer pink in the center.
  4. Set Aside Chicken: Remove the cooked chicken from the skillet and set it aside on a plate.
  5. Sauté Aromatics: In the same skillet, add the minced garlic and sliced onion.
  6. Cook Onion and Garlic: Cook the garlic and onion for 2-3 minutes, stirring occasionally, until the onion becomes translucent.
  7. Add Vegetables: Add the sliced bell pepper and mushrooms to the skillet with the garlic and onion.
  8. Stir-fry Vegetables: Stir-fry the vegetables for an additional 3-4 minutes, or until they begin to soften.
  9. Return Chicken: Return the cooked chicken to the skillet with the vegetables.
  10. Prepare Sauce: In a small bowl, mix together 1/4 cup soy sauce, 2 tablespoons oyster sauce, 2 tablespoons hoisin sauce, 1 tablespoon sesame oil, and 1 tablespoon sugar.
  11. Add Sauce: Pour the sauce mixture over the chicken and vegetables in the skillet.
  12. Add Water: Add 1/4 cup of water to the skillet, then stir everything together to combine.
  13. Add Ginger: Add 1 teaspoon of minced ginger to the skillet and stir to evenly distribute.
  14. Season: Season the dish with 1/4 teaspoon of black pepper, and stir again to mix.
  15. Add Noodles: Add the cooked lo mein noodles to the skillet and toss everything together to ensure the noodles are coated with the sauce.
  16. Continue Stir-frying: Continue to stir-fry the noodles and chicken for 2-3 minutes, ensuring the noodles are heated through.
  17. Remove from Heat: Once everything is well combined and heated, remove the skillet from the heat.
  18. Garnish and Serve: Garnish with sliced green onions before serving.

Notes

  • Use day-old noodles or freshly boiled lo mein noodles for best texture.
  • Feel free to substitute chicken breast with chicken thighs for juicier meat.
  • Adjust the amount of sugar and sauces to taste for sweeter or saltier preferences.
  • For a vegetarian version, omit chicken and add more vegetables or tofu, and use vegetarian oyster sauce.
  • This dish can be prepared ahead and reheated on the stovetop for quick meals.
