Description

Delicious and hearty Chicken Parmesan Subs featuring crispy breaded chicken breasts topped with marinara sauce and melted mozzarella cheese, all nestled inside toasted sub rolls. This classic Italian-American sandwich is perfect for a satisfying main course.

Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts (halved lengthwise)
  • 1/2 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup olive oil

Assembly

  • 1 cup marinara sauce (warmed)
  • 1 1/2 cups shredded mozzarella cheese
  • 4 sub rolls or hoagie buns
  • 2 tablespoons chopped fresh basil or parsley (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the assembled subs.
  2. Prepare Chicken Cutlets: Pound the chicken breasts lightly to an even thickness to ensure even cooking.
  3. Set Up Breading Station: Arrange three shallow bowls: place flour in the first, beaten eggs in the second, and combine Italian-style breadcrumbs, grated Parmesan, garlic powder, salt, and black pepper in the third bowl.
  4. Bread the Chicken: Dredge each chicken piece first in flour, then dip into the beaten eggs, and finally coat thoroughly with the breadcrumb mixture.
  5. Cook Chicken: Heat olive oil in a large skillet over medium heat. Cook the breaded chicken pieces in batches for 3 to 4 minutes on each side until golden brown and cooked through. Transfer cooked chicken onto a paper towel-lined plate to drain excess oil.
  6. Assemble Subs: Slice the sub rolls, place one piece of cooked chicken inside each roll, then spoon warm marinara sauce over the chicken, and top with shredded mozzarella cheese.
  7. Bake Subs: Arrange the assembled subs on a baking sheet and bake in the preheated oven for 5 to 7 minutes, or until the cheese is melted and bubbly.
  8. Garnish and Serve: Remove from the oven, sprinkle with chopped fresh basil or parsley if desired, and serve the subs warm.

Notes

  • You can use store-bought chicken tenders or frozen breaded cutlets to save time.
  • For extra flavor, add red pepper flakes or drizzle with balsamic glaze before serving.
