Chickpea Salad:
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1/4 cup mayonnaise (or vegan mayo)
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 1 celery stalk, finely chopped
- 1/4 cup red onion, finely chopped
- 1 tablespoon chopped fresh parsley
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
Additional Ingredients:
- 4 slices of bread or sandwich rolls
- Lettuce and tomato slices for serving
Instructions
- Mash Chickpeas: In a medium bowl, mash the chickpeas until mostly broken down but still slightly chunky.
- Mix Ingredients: Stir in the mayo, Dijon mustard, lemon juice, celery, red onion, parsley, garlic powder, salt, and pepper. Mix until well combined and creamy.
- Adjust Seasoning: Taste and adjust seasoning as needed.
- Assemble Sandwiches: Scoop the chickpea salad onto bread or rolls and top with lettuce and tomato slices.
