Description

This Chickpea Salad Sandwich is a flavorful and satisfying plant-based lunch option. Creamy mashed chickpeas are mixed with mayo, Dijon mustard, and fresh veggies, then served on bread with crisp lettuce and juicy tomato slices.

Chickpea Salad:

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/4 cup mayonnaise (or vegan mayo)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 celery stalk, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon garlic powder

Additional Ingredients:

  • 4 slices of bread or sandwich rolls
  • Lettuce and tomato slices for serving

Instructions

  2. Mix Ingredients: Stir in the mayo, Dijon mustard, lemon juice, celery, red onion, parsley, garlic powder, salt, and pepper. Mix until well combined and creamy.
  3. Adjust Seasoning: Taste and adjust seasoning as needed.
  4. Assemble Sandwiches: Scoop the chickpea salad onto bread or rolls and top with lettuce and tomato slices.
