Instructions
- Cook the noodles: Bring a pot of water to a boil and cook soba noodles according to package instructions, about 3-4 minutes. Prepare the rest of your ingredients while the noodles cook to ensure a smooth workflow.
- Prepare the sauce: In a skillet over medium-high heat, combine olive oil, soy sauce, sriracha, hoisin sauce, lime juice, minced garlic, and crushed red pepper flakes. Stir frequently and cook for 2-3 minutes until the sauce is warmed through and the garlic is fragrant.
- Toss noodles with sauce: Drain the cooked soba noodles and add them to the skillet with the sauce. Toss well to coat the noodles evenly. Adjust seasoning with salt and pepper as desired.
- Garnish and serve: Transfer noodles to serving bowls. Sprinkle chopped scallions and optional sesame seeds on top. Serve immediately with lime wedges on the side for an extra burst of citrus, as the noodles will stick together if left to sit.
