  • 1/2 cup mini chocolate chips for garnish (optional)


Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream Butter and Sugars: In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add Eggs and Flavorings: Add eggs one at a time, beating well after each addition. Mix in vanilla extract and dissolved coffee mixture.
  4. Combine Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture until just combined.
  5. Add Chocolate Chips: Fold in chocolate chips.
  6. Bake: Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart. Bake for 9 to 11 minutes, until edges are set but centers look slightly soft.
  7. Cool and Garnish: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. Garnish with mini chocolate chips while still warm if desired.

Notes

  • For stronger coffee flavor, increase instant coffee to 1 tablespoon dissolved in 2 tablespoons hot water.
