Instructions

  1. Bloom the Gelatin: Sprinkle the unflavored powdered gelatin over the cold water in a small bowl. Let it sit undisturbed for 5 to 10 minutes until it absorbs the water and softens.
  2. Heat Cream Mixture: In a medium saucepan set over medium heat, combine the heavy cream, whole milk, granulated sugar, instant espresso powder, and a pinch of salt. Stir continuously until the sugar and espresso powder fully dissolve and the mixture is hot but not boiling.
  3. Incorporate Gelatin: Remove the saucepan from the heat. Add the bloomed gelatin mixture to the hot cream mixture and stir thoroughly until the gelatin is completely dissolved and the mixture is smooth.
  4. Add Vanilla: Stir in the vanilla extract evenly throughout the mixture to enhance flavor.
  5. Pour and Chill: Pour the coffee panna cotta mixture into individual ramekins or serving glasses. Allow them to cool to room temperature before covering and transferring to the refrigerator.
  6. Set the Panna Cotta: Refrigerate for at least 4 hours, or until the panna cotta has fully set and has a firm yet creamy texture.
  7. Serve: When ready to serve, optionally top with whipped cream, chocolate shavings, or a dusting of cocoa powder. To unmold, briefly dip the ramekins in hot water and invert onto a serving plate.
