Ingredients
Scale
Cauliflower Mash:
- 1 large head of cauliflower, cut into florets
- 2 tablespoons unsalted butter
- 1/4 cup sour cream or Greek yogurt
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1–2 tablespoons milk or cream, as needed for consistency
Instructions
- Cook the Cauliflower: Bring a large pot of salted water to a boil and add the cauliflower florets. Cook for 10–12 minutes, or until very tender. Drain well and let sit for a minute to release excess moisture.
- Blend the Ingredients: In a food processor or blender, combine the cooked cauliflower, butter, sour cream, garlic, Parmesan, salt, and pepper. Blend until smooth and creamy, adding a splash of milk or cream as needed to reach your desired consistency.
- Season and Serve: Taste and adjust seasoning if necessary. Serve warm, garnished with extra butter or herbs if desired.
Notes
- For an extra flavor boost, roast the cauliflower instead of boiling it.
- You can also add cream cheese or chives for variation.
- This is a great low-carb alternative to mashed potatoes.
