- 12 ounces fettuccine or penne pasta
For the Steak:
- 1 pound sirloin or ribeye steak, sliced into thin strips
For the Sauce:
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup beef broth
- 4 ounces Gorgonzola cheese, crumbled
- 1/2 cup grated Parmesan cheese
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Cook the Pasta: Boil salted water and cook pasta until al dente. Drain and set aside.
- Sear the Steak: Season steak, sear in a skillet, then set aside.
- Make the Sauce: Sauté garlic, add cream and broth, simmer. Stir in cheeses, thyme, adjust seasoning.
- Combine: Toss pasta in sauce, add steak, mix gently. Garnish with parsley and serve.
