  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/3 cup freshly squeezed lemon juice (about 2 lemons)
  • 1/4 cup capers, drained
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Prepare the Chicken: In a shallow bowl, mix the flour with salt and pepper. Dredge each chicken breast in the seasoned flour, shaking off the excess.
  2. Cook the Chicken: In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken and cook for 4–5 minutes per side, or until golden brown and cooked through. Transfer chicken to a plate and set aside.
  3. Make the Sauce: In the same skillet, reduce heat to medium and add the remaining tablespoon of butter and minced garlic. Sauté for 1 minute until fragrant. Stir in chicken broth and lemon juice, scraping up any browned bits from the pan. Bring to a simmer and let reduce slightly, about 3–4 minutes.
  4. Finish the Dish: Stir in heavy cream, lemon zest, and capers. Simmer for another 2–3 minutes until the sauce thickens. Return the chicken to the skillet and spoon the sauce over the top. Let simmer for 2 more minutes to heat through. Garnish with chopped parsley and serve warm.

Notes

  • For a lighter option, use half-and-half instead of cream and reduce butter slightly.
