Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta.
  2. Sauté Shallots: In a large skillet, heat olive oil and butter over medium heat. Add the finely chopped shallot and sauté for 2-3 minutes until softened and translucent.
  3. Cook Mushrooms and Garlic: Add the minced garlic and sliced mixed mushrooms to the skillet. Cook for 6-8 minutes, stirring occasionally, until the mushrooms are browned and tender.
  4. Add Miso Paste: Stir in the white miso paste and cook for 1 minute to combine with the mushrooms and shallots, allowing the flavors to meld.
  5. Simmer with Broth: Pour in the vegetable broth and bring the mixture to a gentle simmer. Scrape the bottom of the skillet to loosen any flavorful bits.
  6. Add Cream and Cheese: Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Let the sauce simmer for 3-5 minutes until it slightly thickens.
  7. Toss Pasta with Sauce: Add the cooked pasta to the skillet and toss well to coat the noodles evenly with the creamy miso mushroom sauce. Add reserved pasta water a little at a time if the sauce needs loosening.
