Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta.

- Add Miso Paste: Stir in the white miso paste and cook for 1 minute to combine with the mushrooms and shallots, allowing the flavors to meld.
- Simmer with Broth: Pour in the vegetable broth and bring the mixture to a gentle simmer. Scrape the bottom of the skillet to loosen any flavorful bits.
- Add Cream and Cheese: Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Let the sauce simmer for 3-5 minutes until it slightly thickens.
