- 1 lb ground pork
- 1/2 cup finely chopped carrots
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped green onions
- 1/2 cup finely chopped water chestnuts (optional)
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 egg
Wrapper and Frying
- 25–30 lumpia wrappers (or spring roll wrappers)
- Vegetable oil for frying
Instructions
- Prepare the Filling: In a large mixing bowl, combine ground pork, finely chopped carrots, onion, green onions, chopped water chestnuts if using, minced garlic, soy sauce, oyster sauce, salt, black pepper, and egg. Mix thoroughly until the ingredients are well incorporated, ensuring an even distribution of flavors.
- Prepare Wrappers: Separate the lumpia wrappers carefully and cover them with a damp towel to prevent drying out while you work with the filling.
- Assemble Eggrolls: Place about 1 to 2 tablespoons of the filling near one corner of a wrapper. Shape the filling into a thin log and roll the wrapper tightly around it, folding in the sides as you go. Seal the edge with a small dab of water to ensure it stays closed. Repeat this process with the remaining wrappers and filling.
- Heat Oil for Frying: Pour about 2 inches of vegetable oil into a deep pan and heat it over medium-high heat until hot enough for frying.
- Fry the Eggrolls: Fry the assembled eggrolls in batches to avoid overcrowding, cooking them until they turn golden brown and crispy, which should take approximately 4 to 6 minutes per batch.
- Drain and Serve: Use a slotted spoon to remove the eggrolls from the oil and drain them on paper towels to remove excess oil. Serve the crispy eggrolls hot with sweet chili sauce or spiced vinegar for dipping.

- You can freeze uncooked eggrolls and fry them directly from frozen; just increase the fry time by a few extra minutes.
