Instructions

  1. Prepare the mixture: In a food processor, combine the chickpeas, rolled oats, 1/4 cup breadcrumbs, grated carrot, minced garlic, onion powder, smoked paprika, soy sauce, olive oil, salt, and pepper. Pulse until the mixture is well combined but retains some texture; avoid over-processing to maintain the nuggets’ bite.
  2. Form nuggets: Scoop about 1 tablespoon of the mixture at a time and shape it into small nugget forms with your hands.
  3. Coat the nuggets: Roll each nugget in the additional 1/2 cup breadcrumbs to ensure a crispy exterior when cooked.
  4. Chill to firm up: Place the coated nuggets on a plate and refrigerate for 15 to 20 minutes to help them hold their shape during cooking.
  5. Cook the nuggets: Heat 2 tablespoons of olive oil in a skillet over medium heat. Cook the nuggets in batches, frying for 2 to 3 minutes on each side, until they become golden brown and crispy.
