Instructions
- Prepare the mixture: In a food processor, combine the chickpeas, rolled oats, 1/4 cup breadcrumbs, grated carrot, minced garlic, onion powder, smoked paprika, soy sauce, olive oil, salt, and pepper. Pulse until the mixture is well combined but retains some texture; avoid over-processing to maintain the nuggets’ bite.
- Form nuggets: Scoop about 1 tablespoon of the mixture at a time and shape it into small nugget forms with your hands.
- Coat the nuggets: Roll each nugget in the additional 1/2 cup breadcrumbs to ensure a crispy exterior when cooked.
- Chill to firm up: Place the coated nuggets on a plate and refrigerate for 15 to 20 minutes to help them hold their shape during cooking.
- Cook the nuggets: Heat 2 tablespoons of olive oil in a skillet over medium heat. Cook the nuggets in batches, frying for 2 to 3 minutes on each side, until they become golden brown and crispy.
- Drain and serve: Transfer cooked nuggets to a paper towel-lined plate to remove excess oil. Serve warm with BBQ sauce on the side for dipping.

- For a lower-fat option, bake the nuggets at 400°F (200°C) for 20–25 minutes, flipping halfway through.
