  • 4 oz cream cheese, room temperature
  • 1 12 oz container vanilla frosting
  • ½ cup powdered sugar


Instructions

  1. Prepare Cake Batter: Prepare cake batter according to the box directions, but reduce the amount of water by ¼ cup. Keep oil and egg quantities the same to maintain texture and moisture.
  2. Prepare Pan: Line a 10½ by 15½ inch jelly roll pan with parchment paper and spray with non-stick spray to prevent sticking.
  3. Bake Cake: Pour batter into prepared pan and bake for 10–12 minutes or until a toothpick inserted in the center comes out clean.
  4. Roll Cake in Towel: While baking, spread a clean dish towel on the counter and sprinkle it generously with powdered sugar. Immediately after removing cake from oven, invert it onto the towel, peel off parchment paper, and roll the cake up with the towel from the short end into a tight tube. Allow to cool completely, about a few hours.
  5. Prepare Frosting: In a mixer, blend the cream cheese with the vanilla frosting until smooth and well combined.
  6. Assemble Cake Roll: Carefully unroll the cooled cake and spread half of the cream cheese frosting evenly over the cake surface. Then, roll the cake back up gently, making sure not to let the frosting squeeze out of the ends.
