This Easy Sushi Bake is a delicious and comforting twist on traditional sushi, perfect for those who crave the flavors of sushi without the rolling. Sushi Rice

  • 2 cups cooked sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

Seafood Mixture

  • 1 cup imitation crab meat or cooked shrimp, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon cream cheese, softened
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Additional

  • 2 sheets roasted seaweed (nori), cut into small rectangles
  • 1 tablespoon furikake seasoning (optional)
  • Sliced green onions for garnish (optional)
  • Avocado slices for garnish (optional)


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the sushi casserole.
  2. Prepare Rice Layer: In a bowl, combine the cooked sushi rice with rice vinegar, sugar, and salt. Mix thoroughly to evenly season the rice. Then press this mixture firmly into the bottom of an 8×8-inch baking dish, creating an even layer.
  3. Make Seafood Mixture: In a separate bowl, mix together the chopped imitation crab or shrimp with mayonnaise, sriracha, softened cream cheese, soy sauce, and sesame oil until the mixture is smooth and creamy.
  4. Assemble Bake: Spread the seafood mixture evenly over the rice layer in the baking dish. If using, sprinkle furikake seasoning evenly on top for added flavor.
  5. Bake: Place the baking dish in the preheated oven and bake for 15 to 20 minutes, or until the top is hot and slightly golden.
  6. Cool and Serve: Remove the sushi bake from the oven and let it cool for about 5 minutes before serving. Serve warm alongside the roasted seaweed (nori) rectangles and garnish with sliced green onions and avocado if desired.
