Scale
Main Ingredients
- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
- 1 (1 oz) packet taco seasoning
- 1 (1 oz) packet ranch seasoning mix
- 2 cups beef broth
- Salt and pepper to taste
Optional Toppings
- Shredded cheese
- Sour cream
- Sliced jalapeños
- Chopped cilantro
- Tortilla chips
Instructions
- Brown the ground beef: In a large pot or Dutch oven over medium heat, cook the ground beef until browned, breaking it up with a spoon. Drain excess grease if needed to reduce fat.
- Sauté aromatics: Add the chopped onion and minced garlic to the pot with the beef. Cook for 2–3 minutes until fragrant and softened to enhance the soup’s flavor base.
- Add beans, corn, and tomatoes: Stir in the black beans, kidney beans, corn, diced tomatoes, and diced tomatoes with green chilies to layer textures and flavors.
- Season the soup: Mix in the taco seasoning and ranch seasoning packet, then pour in the beef broth. Stir well to combine all ingredients evenly.
- Simmer the soup: Bring the mixture to a simmer, then reduce heat to low. Cook uncovered for 20–25 minutes, occasionally stirring to allow flavors to meld and the soup to thicken slightly.
- Adjust seasoning and serve: Taste the soup and add salt and pepper as needed. Serve hot topped with your favorite optional toppings such as shredded cheese, sour cream, jalapeños, cilantro, and tortilla chips.
