Instructions

  1. Brown the ground beef: In a large pot or Dutch oven over medium heat, cook the ground beef until browned, breaking it up with a spoon. Drain excess grease if needed to reduce fat.
  2. Sauté aromatics: Add the chopped onion and minced garlic to the pot with the beef. Cook for 2–3 minutes until fragrant and softened to enhance the soup’s flavor base.
  3. Add beans, corn, and tomatoes: Stir in the black beans, kidney beans, corn, diced tomatoes, and diced tomatoes with green chilies to layer textures and flavors.
  4. Season the soup: Mix in the taco seasoning and ranch seasoning packet, then pour in the beef broth. Stir well to combine all ingredients evenly.
