Description

Forgotten Chicken is a comforting, one-dish baked casserole featuring tender chicken breasts cooked atop a bed of uncooked rice, all smothered in a creamy blend of chicken and mushroom soups with savory onion soup mix. This easy-to-make meal requires minimal prep and slow baking to achieve juicy chicken and perfectly fluffy rice, making it a perfect family-friendly dinner.

Ingredients

Scale

Proteins

  • 4 boneless, skinless chicken breasts

Rice

  • 1 cup long-grain white rice, uncooked

Soup and Broth

  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 1/2 cups chicken broth

Seasonings

  • 1 packet onion soup mix
  • Salt and pepper, to taste

Garnish

  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Spread Rice: Evenly spread the uncooked long-grain white rice across the bottom of the prepared baking dish, ensuring an even layer.
  3. Mix Soups and Broth: In a mixing bowl, whisk together the cream of chicken soup, cream of mushroom soup, and chicken broth until you achieve a smooth, combined mixture.
  4. Pour Half Mixture: Pour half of the soup and broth mixture evenly over the rice layer to start the cooking process of the rice.
  5. Arrange Chicken: Place the 4 boneless, skinless chicken breasts on top of the rice layer. Season the chicken breasts with salt and pepper according to your preference.
  6. Cover Chicken with Mixture: Pour the remaining half of the soup mixture over the chicken breasts, covering them thoroughly. Then sprinkle the packet of onion soup mix over the top for added flavor.
  7. Cover and Bake: Cover the baking dish tightly with aluminum foil to trap moisture and bake in the preheated oven for 1 hour and 30 minutes, allowing the chicken to cook through and the rice to become tender.
  8. Optional Browning: For a browned top, remove the foil during the last 15 minutes of baking to let the surface crisp slightly.
  9. Garnish and Serve: After baking, remove the dish from the oven and sprinkle fresh chopped parsley on top as an optional garnish before serving.

Notes

  • Ensure the chicken breasts are evenly sized for uniform cooking.
  • Do not rinse the rice before using to help it cook perfectly in the casserole.
  • You can substitute chicken broth with vegetable broth if preferred.
  • Adjust salt and pepper to taste, especially if your soup mixes already contain salt.
  • Covering the dish tightly is important to prevent the rice from drying out during baking.
