  • 1 cup unsalted butter (softened)
  • 1 ¾ cups granulated sugar
  • 4 large egg whites (room temperature)
  • 1 tablespoon vanilla extract
  • 1 cup whole milk (room temperature)
  • ½ cup sour cream (room temperature)
  • ½ cup rainbow sprinkles (jimmies-style)
  • Additional sprinkles for garnish

For the Frosting:

  • 1 cup unsalted butter (softened)
  • 3 ½ cups powdered sugar
  • 23 tablespoons heavy cream or milk
  • 2 teaspoons vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven and prepare pans: Preheat the oven to 350°F and grease and flour two 9-inch round cake pans.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
  3. Prepare batter: In a large mixing bowl, beat the butter and sugar until light and fluffy. Add egg whites, vanilla extract, and alternate adding dry ingredients and milk mixture.
  4. Add sprinkles and bake: Gently fold in rainbow sprinkles, divide batter between pans, and bake for 28–32 minutes. Cool cakes on a rack.
  5. Make frosting: Beat butter until creamy, gradually add powdered sugar, then vanilla, salt, and cream until fluffy.
  6. Frost and decorate: Frost cooled cakes and decorate with additional sprinkles.

Notes

  • Use jimmies-style sprinkles to prevent color bleeding in the batter.
