- Heat oil: Heat the vegetable oil in a deep fryer or a large, heavy-bottomed pot over medium heat until it reaches approximately 350°F (175°C), suitable for deep frying the puffs.
- Mix dough: In a large mixing bowl, combine the mashed plantains with all-purpose flour, baking powder, sugar, salt, and water. Stir thoroughly until a dough forms. If the mixture feels too sticky, gradually add a little more flour until it reaches a pliable consistency.
- Prepare draining station: Line a plate with paper towels to drain excess oil from the fried puffs once cooked.
- Shape puffs: Using a spoon or your hands, scoop small portions of the dough and roll them gently into balls or small oval shapes for uniform frying.
- Fry puffs: Carefully drop the shaped dough balls into the hot oil. Fry them for about 3 to 4 minutes, turning occasionally, until they turn a beautiful golden brown and crisp.
