Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Toppings:
- 8 ounces fresh mozzarella, sliced
- 2 large tomatoes, sliced
- 1/4 cup fresh basil leaves
- 2 tablespoons balsamic glaze
- Extra olive oil for drizzling (optional)
Instructions
- Preheat the grill: Heat the grill to medium-high heat.
- Prepare the chicken: Pound the chicken breasts to even thickness, then rub with olive oil and season with Italian seasoning, salt, and pepper.
- Grill the chicken: Cook the chicken for 5–6 minutes per side until fully cooked. During the last 2 minutes, top each piece with mozzarella slices to melt slightly.
