For the Sandwich:
- 2 burger buns (or brioche buns)
- 4 large eggs
- 4 slices Colby Jack cheese
For the Guacamole:
- 1 medium ripe avocado (peeled and seeded)
- 3 tbsp diced red onion
- 1 tbsp mayonnaise
- 1/2 tsp TABASCO® Sauce
- 1/4 tsp salt (or to taste)
For the Seasoned Ground Pork:
- 1/2 lb ground pork
- 1 garlic clove (pressed)
- 1/2 tsp TABASCO® Sauce
- 1/2 tsp salt
- 1/8 tsp black pepper
Instructions
- Prepare the Seasoned Ground Pork: In a skillet over medium heat, add the ground pork, pressed garlic, TABASCO® Sauce, salt, and black pepper. Cook, breaking up the pork with a spatula until it is browned and cooked through, about 6-8 minutes. Remove from heat and set aside.
- Make the Guacamole: In a bowl, mash the ripe avocado until creamy but slightly chunky. Stir in the diced red onion, mayonnaise, TABASCO® Sauce, and salt. Mix well to combine and adjust seasoning to taste.
- Cook the Eggs and Assemble the Sandwich: In the same skillet, reduce heat to medium-low and cook the eggs to your preferred style (fried, scrambled, or over-easy). Toast the burger buns lightly. To assemble, spread the guacamole mixture generously on each bun bottom, layer the cooked seasoned ground pork, place a slice of Colby Jack cheese on top, add the cooked eggs, then cover with the top bun. Serve immediately.

- For a spicier kick, add more TABASCO® Sauce to the guacamole or pork mixture.
- Use brioche buns for a richer, sweeter flavor or regular burger buns for a classic taste.
