  • 1 Tbsp finely chopped cilantro leaves (plus more for garnish)
  • 1/8 tsp salt (or to taste)

Instructions

  1. Prepare the eggs: Peel the boiled eggs carefully and cut each one in half lengthwise. Remove the egg yolks from the halved eggs and place exactly 3 yolks into a small bowl, discarding the remaining yolks.
  2. Add avocado and lime juice: To the bowl with yolks, add the ripe avocado, fresh lime juice, and finely chopped cilantro. The lime juice helps to keep the avocado from browning while adding a fresh tang.
  3. Season the mixture: Sprinkle in 1/4 teaspoon of onion powder and freshly ground black pepper (about 1/8 teaspoon or to taste) to enhance the flavor of the filling.
  4. Incorporate garlic and salt: Press in one clove of garlic and mash all ingredients together thoroughly using a potato masher or a fork until smooth. Add 1/8 teaspoon of salt, adjusting to taste.
  5. Fill the egg whites: Using a pastry bag fitted with a star tip or a zip-lock bag with a small corner cut off, pipe the creamy avocado mixture into the hollowed sections of the egg whites, creating a smooth and decorative finish. Garnish with additional chopped cilantro and a sprinkle of smoked paprika for visual appeal and a touch of smoky flavor.
