Macaroni Salad:

  • 1 lb elbow macaroni
  • 2 cups mayonnaise (preferably Best Foods or Hellmann’s)
  • 1/2 cup whole milk
  • 1/4 cup apple cider vinegar
  • 2 teaspoons sugar
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 medium carrots, peeled and grated
  • 1/4 cup finely chopped onion
  • 2 scallions, thinly sliced (optional)


Instructions

  1. Cook the macaroni: Cook the macaroni until very soft, then toss with vinegar and let sit.
  2. Prepare the dressing: Whisk together mayonnaise, milk, sugar, salt, and pepper.
