Peanut Butter Mixture
- 1 1/3 cup almond flour
- 1 cup natural peanut butter
- 1/4 tsp salt (only if peanut butter isn’t salted)
- 1/4 cup maple syrup
- 1 tsp vanilla extract
Chocolate Coating
- 1 cup chocolate chips
- 1 tsp coconut oil
Instructions
- Mix Ingredients: In a mixing bowl, combine almond flour, natural peanut butter, salt (if your peanut butter isn’t salted), maple syrup, and vanilla extract. Stir until the mixture becomes smooth and fully combined.
- Shape and Chill: Roll the peanut butter mixture into small, bite-sized balls. Place the balls on a tray and refrigerate for about 30 minutes to firm up.
- Melt Chocolate: In a microwave-safe bowl, melt the chocolate chips with coconut oil. Heat in short bursts and stir in between until the chocolate is completely melted and smooth.
- Dip Buckeyes: Remove the chilled peanut butter balls from the refrigerator. Dip each ball into the melted chocolate, covering approximately two-thirds of the surface. Place each dipped ball onto a parchment-lined tray for setting.
- Final Chill: Place the tray back in the refrigerator and chill for at least 15 minutes to allow the chocolate coating to harden before serving.

- If your peanut butter is already salted, omit the additional salt to avoid overpowering the flavor.
- For a vegan option, use vegan chocolate chips and ensure your peanut butter contains no animal products.
