Peanut Butter Mixture

  • 1 1/3 cup almond flour
  • 1 cup natural peanut butter
  • 1/4 tsp salt (only if peanut butter isn’t salted)
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tsp coconut oil


Instructions

  1. Mix Ingredients: In a mixing bowl, combine almond flour, natural peanut butter, salt (if your peanut butter isn’t salted), maple syrup, and vanilla extract. Stir until the mixture becomes smooth and fully combined.
  2. Shape and Chill: Roll the peanut butter mixture into small, bite-sized balls. Place the balls on a tray and refrigerate for about 30 minutes to firm up.
  3. Melt Chocolate: In a microwave-safe bowl, melt the chocolate chips with coconut oil. Heat in short bursts and stir in between until the chocolate is completely melted and smooth.
  4. Dip Buckeyes: Remove the chilled peanut butter balls from the refrigerator. Dip each ball into the melted chocolate, covering approximately two-thirds of the surface. Place each dipped ball onto a parchment-lined tray for setting.
  5. Final Chill: Place the tray back in the refrigerator and chill for at least 15 minutes to allow the chocolate coating to harden before serving.
