Description

Hearty Steak Bites on Loaded Baked Potatoes is a comforting and satisfying dish featuring tender steak pieces seasoned and cooked to perfection, served atop fluffy baked russet potatoes loaded with butter, cheese, sour cream, bacon, and green onions. Perfect for a fulfilling family dinner that combines rich flavors and textures.

Ingredients

Scale

Potatoes

  • 4 large russet potatoes

Steak Bites

  • 1 lb steak, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Loaded Potato Toppings

  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup butter, softened
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Preheat and bake potatoes: Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly, prick them several times with a fork, and place them directly on the oven rack. Bake for 45-60 minutes or until a fork inserted easily pierces the potatoes.
  2. Prepare and season steak: While the potatoes are baking, heat olive oil in a large skillet over medium-high heat. Season the bite-sized steak pieces evenly with garlic powder, onion powder, salt, and pepper.
  3. Cook steak bites: Add the seasoned steak bites to the hot skillet and cook for about 2-3 minutes per side, or until they reach your desired doneness. Remove the skillet from the heat and set the steak aside.
  4. Prepare potato shells: Once the potatoes are done, carefully remove them from the oven and allow to cool slightly. Cut a slit across the top of each potato and gently squeeze the sides to open them up.
  5. Mash potato filling: Scoop out some of the potato flesh into a mixing bowl, leaving a border of potato in the skins. Add the softened butter, half of the shredded cheddar cheese, and sour cream to the scooped potato. Mash everything together until smooth and well combined.
  6. Assemble loaded potatoes: Spoon the mashed potato mixture back into each potato shell. Top each with the cooked steak bites, the remaining cheddar cheese, crumbled bacon, and chopped green onions.
  7. Bake to melt cheese: Return the loaded baked potatoes to the oven and bake for an additional 10 minutes or until the cheese on top is melted and bubbly.
  8. Garnish and serve: Remove from the oven, garnish with chopped fresh parsley if desired, and serve the hearty steak bites on loaded baked potatoes immediately.

Notes

  • Russet potatoes are ideal for baking due to their fluffy interior.
  • Adjust steak cooking time based on your preferred level of doneness.
  • For extra flavor, you can add a pinch of smoked paprika or cayenne pepper to the steak seasoning.
  • Leftover loaded potatoes can be refrigerated and reheated in the oven for best results.
  • Optional parsley adds freshness and color but can be omitted if unavailable.
