Ingredients
Scale
Steak Bites
- 1 lb sirloin steak (cut into bite-sized pieces)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Baked Potatoes
- 4 large russet potatoes
- 2 tablespoons olive oil
- Salt (for seasoning the potatoes)
Toppings
- 1/2 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 slices cooked bacon (crumbled)
- 2 green onions (chopped)
- 1 tablespoon butter (optional)
Instructions
- Prepare the Baked Potatoes: Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly and pat them dry. Rub each potato with olive oil and sprinkle with salt to season the skin, enhancing crispiness during baking.
- Bake the Potatoes: Place the potatoes directly on the oven rack or a baking sheet and bake for about 45-60 minutes, or until a fork easily pierces through the skin and the insides are tender.
- Cook the Steak Bites: While the potatoes are baking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the sirloin steak pieces with garlic powder, onion powder, smoked paprika, salt, and pepper. Add the steak bites to the skillet and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes.
- Assemble the Loaded Potatoes: Once the baked potatoes are done, remove them from the oven. Carefully slice each potato open lengthwise and use a fork to fluff the interior. If desired, add a tablespoon of butter into each potato for richness.
- Add Cheese and Melt: Sprinkle shredded cheddar cheese inside the fluffed potato and return to the oven or under the broiler for a few minutes until the cheese melts and bubbles.
- Top with Sour Cream, Bacon, and Green Onions: Remove the potatoes from the oven, then top each with a generous spoonful of sour cream, crumbled cooked bacon, chopped green onions, and the hot steak bites to finish the dish.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the steak seasoning.
- Use a fork to fluff the baked potato insides gently to avoid breaking the skin.
- Bacon can be substituted with turkey bacon or omitted for a lighter option.
- Serve immediately after assembling to enjoy the steak bites warm and potatoes fluffy.
- Leftover steak bites can be refrigerated and reheated in a skillet for best texture.
