Description

Pomegranate molasses is a thick, tangy syrup made by reducing pomegranate juice with sugar and lemon juice. This versatile condiment adds a unique sweet and tart flavor to a variety of dishes, including salads, marinades, and Middle Eastern recipes.

Ingredients

Scale

Ingredients

  • 3 cups pomegranate juice
  • 1/2 cup granulated sugar
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Combine Ingredients: In a saucepan or dutch oven over medium heat, combine the pomegranate juice, granulated sugar, and freshly squeezed lemon juice. Stir continuously until the sugar has fully dissolved into the juice mixture.
  2. Simmer the Mixture: Bring the mixture to a low simmer. Maintain a gentle simmer for 50 to 55 minutes, stirring occasionally, until the liquid has reduced significantly and thickened to a syrupy consistency.
  3. Cool and Store: Remove the pan from heat and allow the molasses to cool for at least 10 minutes in the pan. Then transfer the thickened syrup into a clean glass jar. Seal tightly and store in the refrigerator where it will keep for up to 6 months.

Notes

  • Use 100% pomegranate juice for the best flavor and natural sweetness.
  • The consistency should be thick enough to coat the back of a spoon; it will thicken further when cooled.
  • Store in a sterilized glass jar to maximize shelf life.
  • Pomegranate molasses enhances the flavor of dressings, dips, roasted meats, and vegetable dishes.
  • Adjust the sugar amount based on the sweetness of your pomegranate juice and personal preference.
