Instructions

  1. Prepare the Shirataki Rice: Rinse and drain the shirataki rice thoroughly. Dry-fry it in a pan over medium heat for 2–3 minutes to evaporate excess moisture. Remove from heat and set aside. If using cauliflower rice, have it ready.
  2. Cook the Ground Beef: Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add the lean ground beef and cook until browned, breaking it up into small pieces as it cooks to ensure even browning.
  3. Add Aromatics: Stir in the minced garlic and grated fresh ginger into the browned beef. Cook for about 1 minute until fragrant, stirring frequently to avoid burning.
  4. Steam the Broccoli: Add the broccoli florets to the skillet with a splash of water. Cover the pan with a lid and steam the broccoli for 2–3 minutes until it is just tender but still crisp.
  5. Make and Add the Sauce: In a small bowl, mix the soy sauce (or coconut aminos), rice vinegar, sugar-free maple syrup (or keto sweetener), and toasted sesame oil. Pour this sauce mixture into the skillet and stir to coat the beef and broccoli evenly. Let it simmer for 1–2 minutes to let the flavors combine.
  6. Serve: Spoon the beef and broccoli mixture over the prepared shirataki or cauliflower rice. Garnish with your choice of red pepper flakes, sliced green onions, and sesame seeds for added flavor and presentation.
