For the Koftas:

  • 1 pound ground beef or lamb
  • 1 small onion, finely grated
  • 2 garlic cloves, minced
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Mix the Kofta Ingredients: In a large bowl, combine the ground meat, grated onion, garlic, parsley, mint, cumin, coriander, cinnamon, paprika, cayenne (if using), salt, and black pepper. Mix thoroughly with your hands.
  2. Shape the Koftas: Divide the mixture into portions and shape into ovals or cylinders around skewers, or form into patties.
  3. Cook the Koftas: Heat olive oil in a grill pan or skillet. Cook the koftas for 3–4 minutes per side until browned and cooked through.
  4. Serve: Enjoy hot with rice, flatbread, or salad, and a side of yogurt or tahini sauce.

Notes

  • For extra juiciness, use a mix of beef and lamb.
  • Koftas can also be grilled outdoors or baked in the oven at 400°F for 15–20 minutes.
