  • 2 tablespoons all-purpose flour

  • 1 1/2 cups mixed fresh berries (such as strawberries, blueberries, raspberries)
  • 1 tablespoon apricot jam (optional, for glaze)


Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to prepare for baking the tart.
  2. Make the crust dough: In a food processor, pulse together flour, powdered sugar, and salt. Add cold cubed butter and pulse until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, pulsing until the dough just begins to come together.
  3. Shape and bake the crust: Press the dough evenly into the bottom and sides of a 9-inch tart pan. Prick the bottom with a fork to prevent bubbling. Bake for 15 minutes or until lightly golden. Remove and set aside to cool slightly.
  4. Prepare the lemon filling: In a mixing bowl, whisk together the fresh lemon juice, lemon zest, granulated sugar, eggs, heavy cream, and flour until smooth and well combined.
  5. Add filling and bake: Pour the lemon filling into the pre-baked crust. Bake for 20 to 25 minutes, or until the center is just set but still slightly jiggly.
  6. Cool and chill: Let the tart cool completely at room temperature, then refrigerate for at least 1 hour to allow the filling to set and flavors to meld.
  7. Add berry topping and glaze: Before serving, arrange the mixed fresh berries over the chilled tart. If desired, gently warm the apricot jam and brush it lightly over the berries for a shiny glaze.
