Instructions
- Extract Lemon Juice: Squeeze the juice from the lemons into a bowl, ensuring to remove any seeds to avoid bitterness in the dressing.
- Mix Ingredients: In a mixing bowl or jar, combine the lemon juice, extra virgin olive oil, honey or maple syrup, and Dijon mustard. Whisk vigorously or shake the jar until the mixture is well emulsified and smooth.
- Season: Add salt and freshly ground black pepper to taste. Adjust the sweetness by adding more honey or maple syrup if desired and mix again.
