Instructions

  2. Deglaze with wine: Pour in the dry white wine and allow it to simmer for 2–3 minutes until the wine reduces slightly, concentrating its flavor and evaporating the alcohol.
  3. Add tomato paste: Stir in the tomato paste and cook for another minute to deepen the sauce’s richness and slight sweetness.
  4. Incorporate cream and cheese: Lower the heat to low, then gently stir in the heavy cream, grated Parmesan cheese, salt, black pepper, and optional crushed red pepper flakes. Let the sauce simmer gently for 5–7 minutes, stirring occasionally, until it thickens slightly and flavors meld.
  5. Finish with herbs and lemon: Add the juice of half a lemon along with chopped fresh basil and parsley. Cook for 1–2 more minutes to infuse the fresh herbal flavors. Taste and adjust seasoning if necessary.
