Description

These McGriddle Bites combine fluffy mini pancakes with savory breakfast sausage and a touch of maple syrup to create a perfect sweet and savory breakfast treat. Baked to golden perfection in a mini muffin pan, they are easy to make ahead and perfect for busy mornings.

Ingredients

Scale

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup milk
  • 1 large egg
  • 1 tablespoon melted butter
  • 1/2 teaspoon vanilla extract

Additional Ingredients

  • 1/2 cup cooked breakfast sausage, crumbled
  • 1/4 cup maple syrup
  • 1/4 cup shredded cheddar cheese (optional)
  • Oil or cooking spray for greasing

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 375°F (190°C) and grease a mini muffin pan with oil or cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until well combined.
  3. Mix Wet Ingredients: In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
  4. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to overmix.
  5. Fold in Flavorings: Gently fold in the crumbled cooked breakfast sausage, maple syrup, and shredded cheddar cheese if using, ensuring even distribution without overworking the batter.
  6. Fill Muffin Pan: Scoop the batter evenly into the prepared mini muffin wells, filling each about three-quarters full to allow room for rising.
  7. Bake: Place the pan in the preheated oven and bake for 12 to 15 minutes, or until the bites turn golden and a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Allow the McGriddle Bites to cool slightly in the pan before removing and serving warm with extra maple syrup for dipping, if desired.

Notes

  • You can substitute turkey sausage or plant-based sausage for a lighter or vegetarian variation.
  • These bites freeze well; reheat them in the microwave or air fryer for a quick and convenient breakfast.
